The mattress is not included the crib .
You can absolutely convert the full bed back to the crib. You just want to make sure you keep all the pieces to assemble the crib again.
It does require a box spring. The M5789 conversion kit which is the compatible Twin/Full-Size Bed Conversion Kit for the Sprout crib was designed to be used without slats. Instead, it requires a box spring and mattress. The box spring will sit on the support rim of the conversion rails, followed by the mattress.
The height of the shorter front rail is 35".
The Warm White Palma dresser is off-white, which is a slightly different shade than the White Sprout crib. You can certainly pair them together in your nursery, but if you want to ensure a perfect match, you can order a wood swatch from Babyletto to compare the colors more closely.
The space between the floor to the bottom of the crib is 8.75''.
